Sunday Dinner: Ice Cream Cake



My cousin Nicole told us about this cake. Super easy to make, guaranteed to be a crowd pleaser at your next BBQ. The girls helped make it for Father's Day. The hardest part about making this cake is opening all the ice cream sandwiches.

20 - regular ice cream sandwiches
1 -  16 oz container whipped topping (defrosted)
1 - 16 oz jar hot fudge ice cream topping
1 - cup crushed topping of choice (Oreo cookies,
m&m's, chocolate chips, sprinkles, graham crackers, etc.)



Layer a 9 x 13 pan with nine ice cream sandwiches running the long length of the dish. Cut one sandwich in half & lay along other direction. Spread (or drop by the teaspoonful) a layer of hot fudge topping on top of the ice cream sandwiches. Then spread half of the cool whip on top of the fudge topping. I thought about incorporating fruit, but then decided fresh fruit would be easier & more flavorful.

Repeat the layers again ending with cool whip. Top with crushed chocolate chips or any candy/cookie topping of your choice. Cover and freeze for 5-7 hours. A few minutes at room temperature & this dish is easy to cut (and it refreezes well).
